Pumpkin Pancakes

Bowl 1 - Small

  • 1/4 cup coconut flour
  • 1 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp salt
  • 1/4 tsp baking soda

Bowl 2 - Larger

  • 1/4 cup pumpkin puree
  • 3 tbsp almond milk
  • 1 tbsp honey
  • 3 eggs
  • 1 tbsp coconut oil, melted, plus additional for pan
  • 1 tsp vanilla

Mix all the dry ingredients in a small bowl.

Mix all the wet ingredients in a larger bowl. Then slowly add the dry ingredients to the larger bowl and thoroughly mix them.

Makes 7 small pancakes.
